Onion microgreens are delicate, soft, and crunchy with a nutty and slightly sweet, pungent flavor, but the flavor is milder and less potent than a full-grown onion. They contain vitamins A, B, C, and E; carotenes; folic acid; niacin; calcium; iron; zinc; phosphorus; magnesium; potassium; pantothenic acid; and amino acids in your diet.
Onion microgreens are very rich in flavor and nutrients. Best to start tasting small amounts so you can gauge how strong they really are. We use a diluted sea salt solution that contains a full spectrum of trace minerals to water our greens. When plants take in these inorganic minerals, they add a carbon atom to them, making them organic. You then benefit from receiving these trace minerals in their bioavailable organic form. Microgreens can be used in salads, sandwiches, wraps, or as a garnish. Some use them to add flavor to cooked dishes.
