Broccoli Microgreens

Our broccoli microgreens are fairly mild.  Brassicas, also known as cruciferous vegetables, contain high levels of vitamins C, A, E, and K, as well as folate, calcium, iron, B-6, thiamine, potassium, and phosphorus. They are a good source of dietary fiber and those all-important cancer-fighting glucosinolates and isothiocyanates. Broccoli microgreens have very high, concentrated levels of sulforaphane, which can prevent DNA damage that leads to cancer and may prevent inflammation that can lead to neurodegenerative diseases.  

More specifically, a 1-ounce serving of broccoli sprouts provides 73 milligrams of glucoraphanin sulforaphane.  We use a diluted sea salt solution that contains a full spectrum of trace minerals to water our greens.  When plants take in these inorganic minerals, they add a carbon atom to them, making them organic.  You then benefit from receiving these trace minerals in their bioavailable organic form.  Microgreens can be used in salads, sandwiches, wraps, or as a garnish.
