Vegan Microgreen Avocado Toast

A healthy twist on the classic avocado toast, featuring nutrient-packed microgreens.

Ingredients:

  • 2 slices whole grain or sourdough bread
  • 1 ripe avocado
  • 1 cup microgreens (arugula, radish, or mustard greens work well)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Crushed red pepper flakes (optional)

Instructions:

  1. Toast the bread slices to your preference.
  2. While the bread is toasting, mash the avocado in a bowl with lemon juice, salt, and pepper.
  3. Spread the mashed avocado evenly over the toasted bread.
  4. Pile on a generous amount of microgreens on top.
  5. Sprinkle with red pepper flakes for a little heat, if desired. Serve immediately.
