Microgreen Salad With Lemon-Tahini

A fresh and vibrant salad that combines the rich flavors of microgreens with a creamy, zesty dressing.

Ingredients:

  • 2 cups mixed microgreens (like radish, pea shoots, and sunflower)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup pumpkin seeds (optional)

Lemon-Tahini Dressing:

  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp maple syrup or agave
  • Salt and pepper to taste
  • Water (to thin the dressing)


Instructions:

  1. In a large bowl, combine the microgreens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  2. For the dressing, whisk together tahini, lemon juice, olive oil, maple syrup, salt, and pepper. Add water slowly to reach your desired consistency.
  3. Drizzle the dressing over the salad and toss gently to combine. Top with pumpkin seeds if desired.
  4. Serve immediately and enjoy the freshness!
